Snow Peas & Cucumber

1/2 lb. fresh snow peas (you can use a bag of frozen snow peas, but thaw to room temperature before cooking)
2 fresh cucumbers
2 Tbsp. peanut oil
1 small onion, chopped
1/4 tsp. crushed red pepper
1 Tbsp. cider vinegar
1/2 tsp. sugar
1 tsp. salt
1/4 tsp. ground ginger

  1. Snip off tips & remove strings from snow pea pods. If large, cut in half diagonally.
  2. Peel cucumber. Cut in half lengthwise. Scoop out seeds with a spoon and discard the seeds. Cut the cucumber halves crosswise into 1/4 inch slices.
  3. Mix together the vinegar, sugar, salt & ginger in a small bowl.
  4. Heat oil in large skillet or wok. Stir in onion & fry 2 minutes or until soft.
  5. Stir in crushed pepper & cook 5 seconds.
  6. Add cucumber slices & stir fry 1 minute.
  7. Stir in snow peas & cook, stirring and tossing for 2 minutes or just until crisply tender.
  8. Stir in vinegar, sugar, salt & ginger & mix well.
  9. Put into a serving bowl and serve at once.
