Grandma Dillashaw's
Buttermilk Custard Pie

3 large eggs
1 cup thick buttermilk
1 cup sugar
1 heaping tablespoon flour
1/2 teaspoon soda
1 tablespoon vanilla
1 unbaked pie shell

  1. Separate eggs. Beat yolks until thick and creamy.
  2. Add soda to buttermilk, stir, then beat into egg yolks.
  3. Mix flour and sugar. Add to egg mixture. Add flavoring.
  4. Pour into an unbaked pie shell.
  5. Bake in 325 - 350 degree oven until custard sets, about 30 to 45 minutes.
  6. Top with meringue made from egg whites beaten stiff with 3 tablespoons sugar.
  7. Return to oven and brown meringue.
Coconut Custard Pie:
  1. Reduce sugar to 1/2 cup.
  2. Add 1cup of shredded coconut to custard.
  3. Sprinkle top of meringue lightly with coconut before browning.
