Grandma Dillashaw's
Buttermilk Custard Pie3 large eggs
1 cup thick buttermilk
1 cup sugar
1 heaping tablespoon flour
1/2 teaspoon soda
1 tablespoon vanilla
1 unbaked pie shell
Coconut Custard Pie:
- Separate eggs. Beat yolks until thick and creamy.
- Add soda to buttermilk, stir, then beat into egg yolks.
- Mix flour and sugar. Add to egg mixture. Add flavoring.
- Pour into an unbaked pie shell.
- Bake in 325 - 350 degree oven until custard sets, about 30 to 45 minutes.
- Top with meringue made from egg whites beaten stiff with 3 tablespoons sugar.
- Return to oven and brown meringue.
- Reduce sugar to 1/2 cup.
- Add 1cup of shredded coconut to custard.
- Sprinkle top of meringue lightly with coconut before browning.
